Cinnamon Nutmeg Pancakes
I made this by combining several recipes I had. As I've been craving pancakes for a while, I thought it would be a good combination having carbs, (with lots of Cinnamon thank you please), tangy and cinnamon-y yet sweet syrup, served with the crunchy texture of roasted nuts almonds and a citrusy bitter chocolate. Three layers of textures, flavors and sensations that come together to form a party in your mouth.

Valencia
I Travelled to Valencia with work. I Had a great time with great people I consider myself lucky to know and be part of. a few days, lots of food, photos &sugar. In bullet points, this is the summery:
Valencia- landing, tired oh so tired, drive, arrive in Cullera, villa, on a cliff, the sea, the view, breathtaking, a shower, lunch, red wine, oh my god so tired tired. the announcement: I quit. am leaving. Drama. Dinner- paella, paella, more paella, wine. yummy. Dish washer capsules for dessert. not to good..
sleep oh blessed sleep.
2nd day-
The Feria, old city, Orxata, Fartons, Choros con chocolata. Tapas. Yummy.
3rd day-
Parador El Saler. By the sea. Cite' des artes et science- a Calatrava theme park: Large scale, futuristic, out of place, out of touch, out of scale. Cooking dinner. Too much food!
for Dessert- Variations on a theme; Mini Croissant filled withTurr'on Ice cream, topped with melted chocolate & toasted Almonds, served with caramelized Bananas. Crazy.
day 4-
A storm! we drive to the port, than some shopping. Return home.
For dessert- caramelized pineapple.
Back home.
Things I wont forget: My friends, The atmosphere. The love. The laughs. The unstoppable feasting and constant eating. The feeling of belonging.

First day of the rest of my Life
I quit work this week. I simply walked in that room and said- I've had enough. I cant quite put my finger to a single point in my life that I decided 'YES! I want to spend most of my waking hours in front of a computer drawing up Architectural details and schedules". but thats where I ended up.
so I quit. I needed more. I am now back on track following my passions and freedom.
I am getting ready for what, hopefully, will be a great adventure. a once in a lifetime experience. And so I am preparing myself metally, as much as one can, to a year in Italy. a year of great food, wine, architecture, Aesthetics, new people, new language, new scenery, new routine.
I now have to deal with the present- packing my life here- the flat, the cat, family and friends. Getting ready for the unknown unexpected.
my aim is to keep a journal. a way of recording my experiences and sharing them. This is it.
